There's nothing more comforting, or more British than a chunk (or a finger!) of fudge. It's akin to a nice cup of tea, or a piece of toast with butter and marmalade. It's just THE BUSINESS, and no traditional British sweetshop would be complete without a few jars of fudge. As part of the range, we HAD to include Cadbury's Fudge - remember the ad? 'A finger of Fudge is just enough to give your kids a treat'.  Classic!

 


A most marvellous invention…but is a finger of Fudge ever enough?

What is fudge?

Fudge is a sweet that comes in many flavours. Made from crystallised sugar, fudge is produced by boiling sugar, butter and milk before adding other flavourings, including our favourite....chocolate!

The origins of fudge date back to the 1880s and it has remained a staple of sweet shops ever since. Fudge coined its name when it was invented by accident. It was 'fudged' together thanks to a batch of ruined caramels that crystalised and resulted in an early version of fudge that was evolved throughout the years into the smooth, creamy, moreish fudge that we all know and love today.

More recently we've seen some weird and wacky fudge flavours appear such as our vanilla and custard slice fudge or chocolate peanut butter fudge. However, it's simply impossible to beat the classic vanilla or chocolate fudge.

We've all brought back some fudge as a gift for friends and family from our holidays but we don't think you'll want to give any of our fudge away once you've tasted it. If you are buying it as a gift for someone else, don't forget to pop some extra in your basket as a special treat for yourself!

How is Fudge Made?

One of the best things about fudge is that it is so easy to make with only a handful of ingredients needed...the secret is all in the process.

Grab your ingredients

- A tin of condensed milk - typically these are around 397g
- 450g light brown sugar
- 120g of butter (cubed)
- 120ml of milk

Plus anything you want to add to make it your own. Chocolate, raisins, vanilla extract are all favourites of ours!

First place the ingredients in a bowl on low heat (too hot and it will burn) and stir continuously. Make sure the butter is melted and the sugar is dissolved fully.

Then slowly bring the mixture to a boil for around 10-12 minutes. It's important at this point that you stir continuously to prevent the mixture from sticking to the pan. Pay special attention to the edges of the pan where the mixture can catch and burn much more easily, any burning will impact the flavour and smoothness so pay close attention.

At this point, the mixture is incredibly hot so be careful.

Temperature for fudge is important to check the temperature and it should be around 115c for the perfect fudge. Once the mixture has reduced and darkened in colour it should be ready.

Take the mixture off the heat and add your flavours (vanilla extract or chocolate, for example) plus a pinch of salt, stir them in well!

Leave to cool for 10 minutes then stir the mixture. Wait another 5 minutes then stir again, this gives the smooth, creamy texture we all know. Then place in a tin lined with baking paper.

Leave to cool until it's completely firm and you can easily cut with a knife, this should be around 3 hours in a refrigerator.

How To Store Fudge

Storing fudge at room temperature means it will last between one and two weeks if stored in an airtight container.. If you can manage to make your fudge last longer then storing it in the refrigerator will allow you to keep your fudge fresh for up to three weeks.

Can I Freeze Fudge?

Yes! If you want to keep fudge for longer it is possible to freeze fudge at home. Although, I'm not sure why you wouldn't just eat it before it gets close to the freezer! Wrap your precious fudge in clingfilm or tinfoil (ideally both) to ensure the flavour remains as tasty as possible. Once in the freezer, it will comfortably last a couple of months. Just remember to allow the fudge to rest at room temperature and thaw naturally when you're ready to eat!
 

FUDGE FLAVOURS

It’s important to note as well that despite its relatively simple ingredients, fudge can come in a variety of flavours including chocolate fudge. This is probably the most common fudge in Northern America where it is believed fudge originated.

It’s the perfect treat for all confectionary fans – you’ve got chocolate in one hand, fudge in the other…put your hands together! Yummy! Our fudge has a rich chocolatey taste and creamy smooth texture which makes it truly melt in your mouth fantastic, and this is just one of our many fudge-tastic options!

Speaking of our trans-Atlantic friends, our fantastic fudgy flavours don’t just stop at chocolate and vanilla. Oh no, we also have the delectable peanut butter fudge which has the smoothness and creaminess of fudge but nuttiness of peanut butter. If you like peanut butter, you will love this.

Not forgetting grandma’s favourite fudge – Rum and Raisin flavour! Our Rum and Raisin fudge is free of artificial colours, gelatine and gluten-free as well as being vegetarian friendly. Everybody young and old will love this traditional fudge favourite.

If you want to spice things up (or should I say sweeten) you can try our delicious vanilla and custard fudge! While Oliver didn’t sing about this variation of custard, it can still be described as food glorious food.

We also have a relatively new flavour: sea salt and caramel. While it doesn’t sound like this would be the most desired combination, if you haven’t tried it then you genuinely don’t know what you’re missing. The sweetness of the caramel combined with the flavour enhancing salt creates the most amazing taste all wrapped up in a smooth, creamy fudge.

Despite the variety of fudge flavours on offer, sometimes you just need an old, comforting classic. our vanilla fudge will take you back to your school days when your bag of sweets included a couple of cubes of delicious fudge. Best of all, our fudge is sold in the perfect sized bar, wrapped for freshness. We all remember avoiding adding too much fudge to our bag of sweets because we knew how heavy it was. Well, you won't have that problem with our vanilla fudge.
